Ube Bread Roll

If you're an asian, you know that ube (purple yam) is so good! Whenever there's ube jam, cakes or ice cream, we instantly get excited! Especially when it's Good Shepherd Ube Jam! (The best of the best. Solid!) or much more when you get a good heaping spoon of ube in your Halo-halo! Yum!


I live near Tagaytay, so I always buy a kilo or more of Ube whenever I'm at Tagaytay Mahogany Market and while thinking what to do with ube, I was eating a really good cinnamon roll.


Hence, the ube bread roll. Combining the soft, sweet bread with a good ube jam filling. Sounds good right? It is! The bread is soft and moist inside.

Ingredients:For the Ube Filling:

  1. 450g steamed ube

  2. 390g/1 can condensed milk

  3. 1/4 cup butter

For the dough:

  1. 175g milk

  2. 1/4 cup butter

  3. 3 1/4 cups all purpose flour

  4. 7g yeast

  5. 1/4 cup white sugar

  6. 1/2 tsp salt

  7. 1/4 cup water

  8. 1 large egg

Method: For the Ube Filling:

  1. steam ube for 20 mins or until soft when inserted by a toothpick.

  2. remove skin and grate until fine. (i use food processor with grater attachment)

  3. in a bowl, mix ube with condensed milk. transfer to a low heat pan.

  4. stir until thick and creamy. add butter. stir until melted.

  5. remove from heat, set aside.

For the Dough:

  1. pre-heat oven to 350F

  2. mix milk and butter, heat and scald milk. (heat until below boiling point only) let cool, set aside

  3. mix yeast and water to activate for 10 mins.

  4. In a mixing bowl, combine flour, sugar,& salt.

  5. In a low speed mixer, combine flour mixture with eggs, yeast mixture and milk.

  6. set medium speed, mix until dough just pulled out in bowl.

  7. transfer to floured surface, knead until smooth about 3-5 mins.

  8. rest for 15 mins, cover with towel

  9. after 15 mins, roll the dough into square and 1/2 inch thick.

  10. spread the ube filling to the dough. roll and pinch edge to seal together.

  11. cut to 10-12 pcs. about 2 1/2 - 3 inches tall.

  12. coat the 10 inch circle pan with butter and place the rolls close together.

  13. let it rise for 45 mins.

  14. bake for 18 mins / 350F. ( Make sure to use oven thermometer and check the rolls every 8-10 mins to avoid burned breads)
