Banana French toast with Peanut butter cream sauce.

Back in the day, I was working in a breakfast buffet and was placed in eggs, and pancake station. It was a little bit hard because you have to cook it on the spot, and believed me, that was the busiest station every breakfast shift because you can’t make eggs in advance. (No one loves stale eggs right?) But I love it. You get to talk to a lot of people and somehow they always share funny stories.


So yeah, made a lot of eggs, pancakes, and toast at that time. But still can’t make a perfect French omelet. (A good Teflon pan is a must!)


I always start my work by cracking lots of eggs, making pancake batter, and prepping all the jams and sauces. We made this in large batches but somehow manage to make it to small ratio.

Serves 1-2

For the Peanut butter sauce:

  • · 60g Peanut butter

  • · 70g Heavy cream

  • · 1 tbsp Sugar

French toast:

  • · 70g Heavy cream

  • · 40g Sugar

  • · 1 pcs Egg

  • · 1 tsp Cinnamon

  • · ½ tsp Vanilla

  • · 2-3 Brioche loaf.

Method:

  1. 1. In a pan, combine Peanut butter and cream. Mix until smooth. Heat until warm. Set aside. (Add more cream if still not smooth and until it reach sauce consistency.) (Add sugar to desired taste.)

  2. 2. In a bowl, combine all ingredients for French toast.

  3. 3. Soak bread, toast in pan until brown all sides.

  4. 4. Serve with toasted almonds, chocolates, and fruits. Enjoy!
